Healthy Eating With Green Food

Healthy eating suggestions, including eating green vegetables, seem perfect in honor of the first day of spring around the corner and St. Patrick's Day.


It’s March, time for healthy eating to get in our arms and legs to come out from under layers of clothing and to get ready for our bathing suits. Spring is right around the corner on March 20 and St Patricks Day is calling! Healthy eating is many things and often people equate green vegetables with healthy eating. Even though we all know we need to choose the rainbow of colors, in honor of my Irish heritage, I’m going to talk green today! And, no, green beer does not count! Dark green leafy vegetables such as kale and spinach have been popular in recent years, but there are many more green vegetables. You can eat them raw, cooked, seasoned, incorporated into main dishes or sides and blend them into a homemade smoothie to eat green every day!

Why green for healthy eating?

Naturally green foods, fruits & vegetables, are powerhouses of nutrition to help protect against heart disease, diabetes, obesity, and possibly certain cancers. They are chock full of fiber, vitamins, minerals, and other plant based nutrients that are essential for healthy living! Green veggies are great sources of Vitamins A, C, and K (depending on the vegetable) and also calcium, folate and potassium.

  • bok choy
  • broccoli
  • Brussels sprouts
  • collard greens
  • dark green leafy lettuce
